An Unbroken Cask Legacy
Our barrel maturation and cask seasoning program is unlike any other, with exclusive access to some of the oldest fortified wine casks in the world, an unbroken lineage dating back to 1878.
We mature and finish each whisky with our custom fortified seasoning that delivers a deep sweetness, balanced by our unique use of apple wood smoked water – offering a fuller, silkier mouthfeel.
Shaped by our Island Home of Tasmania
From freezing winters to warm summers, these extreme temperature swings force the whisky deep in and out of the oak, accelerating and intensifying maturation and flavour.
Add to that the island’s clean air, pure water, and local barley, and you get a whisky shaped largely by its environment, not just by time.

Our Tasmanian barley is the foundation of our flavour and texture. It gives us a much oilier, richer and more silky liquid, with a rich taste and velvety texture that coats the mouth and lingers on the palate. Fermenting for seven days gives those flavours time to fully develop, resulting in a deeply delicious and complex whisky.
